Our food and beverage director is from Texas, our executive chef is from Mexico, and our chef de cuisine is from Louisiana, so our menus reflect stories and life experiences we love to share. These unique menus can be presented indoors or outdoors and are carefully explored to authentically present classic favorites and delightfully surprising offerings guests will love.
The Big Sam experience is our tribute to Texas legend Sam Houston. It’s a one-of-a-kind pit manufactured by Pitmaker, the finest manufacturer of pits in Texas and we create live-fire, grilled, and smoked meats such as prime brisket, glazed pork ribs, pork belly burnt ends, wood-fired oysters, and bacon-wrapped Bandera quail.
